Fossil Oyster Caves

Sainte-Croix-du-Mont is home to a unique geological site in France consisting of oyster fossils overlooking the Garonne. Dated to 22 million years ago by geologists, the oysters accumulated at the bottom of the seas during the Tertiary era then found themselves overhanging the valley after the tectonic movements of the end of the Tertiary and the retreat of the waters. . Erosion has dug caves in the thickness of the bench, which are still used today for the conservation of sweet white wine (summer tasting). From the oyster bed, discover a magnificent panorama of the Sauternes.
